Crumble the loaf and mix all the other ingredients until smooth. Stuff the fish tightly with the mixture, place on a piece of foil, add some mint, basil, olive oil, a squeeze of lemon and season. Seal the foil and cook in the oven for 30 minutes. If desired you can cook over a barbeque for about 45 min. To check if the fish is done just poke with a toothpick next to the head, the bone should be white in color.
