Start this recipe by making the chocolate sauce. Place the cream and chopped chocolate in a saucepan and melt together. Remove off the heat and allow to cool and thicken. Meanwhile, cut the top off the panettone and put aside. Cut the center out leaving a 2cm border. Chop up the filling into 3cm cubes, place into a large bowl and drizzle over the amaretto liqueur. In another bowl, mix together all of the filling ingredients, then carefully mix in the amaretto soaked panettone. Stuff this mixture into the panettone shell and press in well. Place on the top and chill for an hour. To serve, place the stuffed panettone onto a cake stand, drizzle over the chocolate sauce, dust with icing sugar and slice.
