Cut the chicken breast in half and stuff with the walnuts, sausage meat and mozzarella. Roll up and seal on both sides in a hot pan till golden brown. Place in an ovenproof dish and continue to cook in the oven at 185`c for 15 minutes. For the sauce, fry spring onions with garlic till caramelized. Add in the dry sherry, soya sauce, sesame oil and sweet chilli sauce and cook for 10 minutes, by which time the sauce will have thickened. Mix half of the sauce with the cooked noodles and serve on 2 plates. Place the stuffed chicken on top and pour the remaining sauce on top.
