Cook the Cabbage leafs in salted boiling water for literally thirty seconds and refresh in ice cold water. Pat dry on a kitchen towel. Next, prepare the stuffing. In a Medium pan sweat the garlic leeks, prawns and cook for just a few seconds with a little olive oil. Do not over cook the prawns otherwise they will become rubbery. Finally add the spinach and take off the heat. Once the mixture is totally cool, in a bowl Mix the ricotta, salmon and the same mixture along with lemon zest and chopped chives. For the Dressing whisk the juice of 1 lemon with a little olive oil. Add some chopped chives and season to taste.
