Start this recipe by heating a little oil in a pan and quickly fry the onion and garlic for a minute. Add in the sliced mushrooms and fry for 2 minutes. Remove off the heat. Meanwhile, slice open the beef fillet and lay on the blue cheese. Next, lay the cooked mushroom mixture on top and roll up. Lay out the Parma ham slices overlapping, then roll in the filled beef fillet, covering completely. Drizzle with a little oil and place onto a baking tray. Bake in the oven at 200`c for 20 minutes or to your liking. When ready, serve the stuffed fillet with cooked vegetables and potatoes.
