Start this recipe by placing all of the patty ingredients into a food processor and season well with pepper and a little salt. Blitz together for 5-10 seconds until finely ground. Turn out and form into small patties 2 inches wide. Heat a griddle pan with a little oil and cook the patties on both sides for 2-3 minutes. Meanwhile, mix together the dipping sauce ingredients and place into a small bowl. To serve, place the dipping sauce onto a large black plate and decoratively arrange the patties on the side. Sprinkle with coriander leaves and serve.
