To make the batter, whisk the eggs with the melted butter and sugar, then stir in the flour and milk alternatively till you achieve a nice batter. Allow to rest for 3 minutes while you prepare the ricotta filling. For the ricotta just mix together the ricotta, sugar, vanilla and orange zest and put aside. Heat a large pan with a little oil or butter and fry dollops of the batter on both sides for a minute or two or until cooked through. Serve the pancakes layered with the ricotta filling in between.
