Using a sharp knife flatten the beef to make space for the stuffing, chop the leeks, sun dried tomatoes, cheddar and mix in a bowl with the cranberries. Place the stuffing on the beef, roll and tighten with a string. Blend the bread into crumbs season and mix in the rosemary and melt butter. Brush the top part of the beef with the unami paste and cover with the bread mixture, do not completely cover the string to be able to remove it afterwards.
