Clean the chicken breast from any excess fat. Make a small incision from the back of the breast and insert the sliced ingredients in the breast. Cut the pumpkin in medium size dice and marinate in some honey brown sugar herbs and spices as preferred. Also cut the potatoes in wedges with the skin on, marinate with paprika sweet chilly and ground coriander. Bake both potatoes and pumpkin in the oven at a 180`c. Seal the breast in the a sauté pan and place it in the oven for approximately 15 minutes at a temp of 180`c. Start plating by placing the pumpkin in the bottom, slice the breast and place it on top, wedges on the side and sauce to compliment the chicken. Garnish with fresh herbs and serve.
