Stuffed calamari with seafood risotto


  • 1 calamari
  • 50g mixed seafood
  • 50g Arborio rice
  • 100ml cream
  • 1 egg
  • 20ml olive oil
  • 10g butter
  • Salt and pepper
  • 200ml fish stock
  • 1 onion
  • 1 clove garlic


Preheat a pan and shallow fry the onions, garlic and the rice for 1 minute, stirring constantly before gradually pouring in the fish stock a little at a time. Next, add the seafood, egg and cream. Use the mixture to fill the calamari and cook in oven with some butter, salt , pepper and fish stock. Cook for 20 minutes and serve immediately.
