Start this recipe by making the base. Crush the biscuits and stir in the melted butter. Line the base of an 8inch cake tin with baking paper. Press the biscuits around the sides and base of the tin. Place half of the frozen ice-cream into a mixer and add in the chopped white chocolate. Mix together then pour into the base of the crust . Place into the freezer for 30 minutes. Place the remaining half tub of ice-cream into a mixer. Add in a few drops of red colour and the lemon zest and mix together. Stir in the chopped strawberries and pour this mixture over the vanilla ice-cream. Freeze for at least 1 ½ hours. To serve, remove the pie from the freezer and take out of the tin. Place onto a serving plate. Spoon the whipped cream on top of the frozen pie. Decorate with fresh strawberries and blueberries and serve after 5 minutes.
