Start this recipe by placing the sweet potato wedges, oil and paprika in a baking tray and season well with salt and pepper. Place into the oven at 200`c for 40 minutes until crispy. Meanwhile, prepare the burgers. Fry the chopped onion and garlic with 1 tbsp olive oil and place into a bowl with the beef mince. Mix in the egg, thyme, breadcrumbs and season well with salt and pepper. Form into 10 patties and heat the remaining tbsp of oil in a griddle pan. Fry the burgers on both sides for a few minutes until cooked through then place a slice of Cheddar cheese on top of each burger and allow to melt. To serve, spread some mayonnaise on the base of each burger bun and cover with a few salad leaves. Place on the burgers, then cover with sliced onions. Top with a little more mayonnaise then place on the burger bun top. Stick through a wooden skewer and serve with the crispy sweet potato wedges.
