Start this recipe by heating the grill of your oven, and also heating the olive oil in a non-stick frying pan. Meanwhile, quickly whisk together the eggs and fresh herbs in a bowl and season well with salt and pepper. Pour this mixture into the heated pan and spread out. Sprinkle over the cream cheese and cook till the egg is almost cooked. Sprinkle over the smoked salmon and place the pan under the hot grill for a couple of minutes to cook the frittata on top. When ready, remove the pan from under the grill and allow to cool for a couple of minutes. Cut the frittata into six pieces and serve with a few salad leaves and topped with some red onion slices and a little more freshly ground black pepper.
