Drizzle the lamb shanks with olive season well and place in a baking tray.  Roughly chop the onions, carrots, celery, tomatoes and garlic.  Place around the shank and add the stock.  Cover with foil and place in a pre heated oven set to 150`c and cook for 1 hour. Clean the celeriac and pumpkin and cut to your liking. Toss in olive oil, season and bake for 20minutes. Serve the lamb with its own gravy.
