Rigatoni broccoli and speck


  • 400g rigatoni pasta
  • 1 head broccoli cut into florets
  • 200g speck or prosciutto cut in cubes
  • 1 spring onion
  • 1 medium red onion
  • 2 tbsp chopped parsley
  • 50ml extra virgin olive oil
  • 200g fine grated Parmesan cheese


Prepare a pot of salted water to boil. Put the pasta and broccoli to boil together for about 9 minutes or according to manufacturer’s timing for pasta. Heat the oil and gently fry the speck cubes until crispy. Add the onions and fry. Strain the pasta and broccoli on to the speck with a little water from the pasta itself and stir without cooking, the broccoli should break giving you a green texture. Add the parsley and fold in the grated Parmesan. Serve and drizzle a little olive oil on top.
