Pumpkin and chocolate chip cookies with walnuts

Ingredients

For the pumpkin puree

  • 300g pumpkin baked, drained and blended
  • 250g brown sugar
  • 50g Michael’s olive oil

You will also need

  • 1 egg
  • 300g flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • ½ tsp salt
  • 1 tsp ground nutmeg
  • 1 tsp baking soda
  • 1 tablespoon milk
  • 1 tsp vanilla essence
  • 300g chocolate chips
  • 200g chopped walnuts

Method

Put the baking soda in the egg mix. Fold the flour mixture in to the egg mix till smooth. Add the vanilla. Fold in the chocolate chips and walnuts. Scoop on a greased tray and bake for about 12 minutes in a hot oven 180°C, leave to cool and enjoy
