Start this recipe by cooking the pears. Place them into a pan with the 20g butter, 1 tbsp sugar and sultanas and cook down for 5 minutes. Take off the heat and cool down before mixing in the cold custard and a good pinch of cinnamon. Lay out 1 filo sheets and brush with a little butter. Cover with another sheet of filo. Place 2 heaped tbsp of the pear filling at 1 end, fold in the sides then roll up (like a spring roll)Repeat with the remaining filo and filling. Place the strudels on a greased baking sheet, brush lightly with butter and sprinkle over the flaked almonds. Bake at 200`c for approximately 20 minutes. Remove from the oven and serve dusted with icing sugar and a sprinkle of cinnamon.
