This is a very easy recipe to prepare. Spread the 4 slices of bread with the peanut butter on 1 side. Lay the sliced bananas on 2 of the slices and sprinkle over the cinnamon. Cover with the remaining slices, peanut butter side down. In a deep dish, whisk together the eggs, milk, vanilla and maple syrup or honey. Heat up a large frying pan and melt in the butter. Quickly, dip the 2 filled sandwiches into the egg mixture on both sides and quickly fry in the melted butter in the pan. It should only take a couple of minutes on each side if the pan is hot enough. Remove from the pan, cut the sandwiches in half diagonally and serve with extra cinnamon, maple syrup or honey.
