In a bowl mix sugar and lard until blended smoothly. Add the eggs and cream the mixture. Divide the flour in three equal amounts, and the milk in two equal amounts. Fold in flour first than milk, and repeat, finish off with the flour. In a cup, squeeze the lemons, add the baking soda, the mix will start frothing, fold in straight away. Meanwhile line the dish with greaseproof paper, melt butter and brown sugar, and pour in the dish. Cut the melon in slices, lay evenly on the syrup, cover with the cake mix and bake in the oven at 180`c for 20-30 minutes.
