Start this recipe with the relish. Heat the oil in a small pan and sauté the garlic and onion for 2 minutes. Add in the fresh thyme leaves, cherry tomatoes and season well with salt and pepper and cook for 2 minutes. Turn down the heat, stir in the brown sugar and vinegar and cook down for 10 minutes. Next, hammer the chicken breast slices and season well with salt and pepper. Bread the chicken in the flour, egg and the seasoned breadcrumbs. Place on a baking tray, drizzle with oil and bake for 10-12 minutes. When ready, put the dish together. Cut the ciabattas in half, drizzle with a little olive oil and lightly toast. When ready, fill the ciabattas with a good serving of the tomato relish, followed by basil leaves, breaded chicken and the sliced goats` cheese. Finish off with another spoon of tomato relish on top. Cut in half and serve immediately of wrap up and serve at a picnic.
