Maltese Bigilla


  • 250g ful ta’ Ġirba (Fava beans)
  • 2 tbsp extra virgin olive oil
  • 1-2 cloves garlic, crushed
  • Good pinch chilli flakes
  • 1 tbsp dried mixed herbs
  • 1 tbsp chopped parsley and mint
  • Extra virgin olive oil, parsley chilli flakes and galetti for serving



Wash the beans and leave them soaking overnight in cold water. When ready to cook, change the water and fill to just cover the beans. Cook on a medium heat until they become very tender. Place the cooked beans in a food processor with all the other ingredients and pulse till smooth. Serve in a bowl drizzled with extra virgin olive oil and extra parsley and chilli flakes on top and Maltese galleti on the side.
