Mafaldine alla basilico with vegetables and prawns (Gluten-free)


  • 1kg Mafaldine alla basilico (gluten free)
  • 100g zucchini
  • 100g carrots
  • 100g prawns
  • 50g dill, parsley, chives
  • 100g cherry tomatoes
  • 50ml white wine
  • 50g spring onions
  • 500ml homemade prawns stock
  • 2 tbsp olive oil
  • 4 tbsp butter



Heat the butter and oil in a saucepan and sauté together the onions, tomatoes and herbs . Cook for a few minutes before adding in the zucchini, carrots and prawns. Cook for a further 3 minutes before adding the wine and the stock. Bring down the heat to a simmer and cook for a few more minutes. Meanwhile, cook the pasta in salted boiling water for a 8 minutes. Serve the pasta with the sauce immediately.
