Lemon curd slice with muesli crumble topping


For the pastry base and filling

  • 150g plain flour
  • 75g butter
  • 40g icing sugar
  • Grated zest of a lemon
  • 1 tsp vanilla essence
  • 1 egg yolk
  • 1 jar lemon curd
  • 1 tbsp extra icing sugar to decorate

For the topping

  • 50g butter
  • 30g light brown sugar
  • 50g plain flour
  • 80g muesli


Start this recipe by greasing a deep baking tray and line the base with baking paper. To make the pastry, rub together the butter, plain flour and icing sugar. Mix in the lemon zest, vanilla and egg yolk and form into a pastry with a little water if necessary. Roll out and line the base and sides of the prepared tin. Spread over the lemon curd evenly and prepare the topping. Rub together the butter, sugar and flour then mix in the muesli. Sprinkle this mixture over the lemon curd and bake at 190`c for 30 minutes. Serve hot or cold sprinkled with the remaining icing sugar
