Line and grease 3 x 22cm round cake tins. To make the cake, beat together all the batter ingredients with an electric beater for 2 minutes. Divide the mixture into 3 bowls, add the vanilla essence to one, lemon zest and juice and a few drops yellow colouring to one and finally the orange zest and juice and orange colouring to the remaining. Mix together well then spread out each mixture into the prepared tins. Bake for approximately 20-25 minutes at 180`c. Meanwhile, prepare the frosting. Lightly mix together the cream cheese and mascarpone. Stir in the icing sugar and vanilla, before folding in the whipped cream. Chill for 30 minutes before using to sandwich and coat the 3 layers of the cake.
