In salted water boil the rice and drain well. Slice the beef, season and seal well in olive oil until browned. Remove from heat and in the same pan sauté the quartered shallots, sliced spring onion, sliced pepper and chopped chillies. Once browned add the sliced peach, honey and caramelize. Add a little olive oil, peas, rice and toss on high heat. Finally add the coriander and adjust the seasoning and serve.
