Make a rub by mixing the salmon ingredients together, then rum all over the salmon fillets. Leave to infuse for at least 30 minutes. Meanwhile, make the avocado salsa by mixing all the ingredients together. When the salmon has infused for an hour, heat a griddle pan and cook the salmon for 3-4 minutes on each side. To serve, plate the beautiful coloured salmon on 2 plates and spoon over the avocado salsa.
