Start by warming up a large griddle pan with a knob of butter, and cook the peaches on both sides for about 2 minutes. The peaches should still be firm. Places the peach halves on a baking tray, brush with the honey, and sprinkle with half the cinnamon. Place under a hot grill, and cook for a minute or two more to caramelize the honey. Quickly place the peaches onto your serving plates, spoon on some mascarpone onto each peach, and drizzle over some more honey. Sprinkle with some more cinnamon before serving.
