Start this recipe by whisking together in a large bowl the eggs, 2 tbsp of the parmesan cheese, parsley, garlic and season well with salt and pepper. Next, toss in the cooked vermicelli and mix together to coat well with the egg mixture. Heat a large pan with a good drizzle of oil and lay in the mixture. Flatten out and cook on both sides until golden brown. Remove from the pan and serve immediately decorated with the Parmesan shaving and Parma ham on top if using.
