On a chopping board chop the chorizo sausage, basil and goats cheese mix together with some olive and seasoning.  Get the beef fillet and on the side make an incision and stuff the beef with the chorizo mix. Rub the beef fillet with salt, rosemary, thyme and freshly ground black pepper and brush with two tablespoons of the oil. Heat a frying pan until smoking and add the steaks, frying for 3-4 minutes on both sides (for rare), or until cooked to your liking. Transfer to warm serving plates to rest for a couple of minutes
