Method

Cut the baguette in half, brush with butter and toast.  Place onto a board and spread over the pesto. Mix together the shredded chicken, garlic mayo, spring onion and grated Parmesan. Spoon on the baguette and garnish with rocket leaves and parmesan shavings.
