Sift the flour and baking powder into a bowl and gently whisk in the egg and 2 tbsp melted butter. Stream in the milk as you mix until you achieve a soft paste and whisk thoroughly to remove any lumps. Add in the remaining milk and mix well to a smooth batter. Heat up a small pan with a little oil or butter and pour in a spoonful of the mixture. Fry on both sides till golden brown and repeat the process with the remaining batter. To serve, stack the pancakes on top of each other and top with dried or fresh fruit and nuts. Drizzle over the maple syrup and serve immediately.
