Start this recipe by cutting the sliced bread into squares and cook in the oven for 5 minutes at 175`c. Meanwhile, peel and mash the bananas in the large bowl and mix in the eggs, milk, sugar, cinnamon and vanilla essence. Add the toasted bread and chocolate chips to the mixture and mix together well for the liquids to be absorbed. Spoon the mixture intothe holes of a greased muffin tin (will make 6-8 depending on their size)and bake in the oven at 175`c for 20 minutes. Serve whilst still warm dusted with icing sugar and with a large scoop of vanilla ice-cream on top
