Baked penne with chicken, chorizo and spinach


  • 200g penne, ½ cooked
  • 1 tbsp olive oil (Fillipo Berio)
  • onion, finely chopped
  • 2 cloves garlic, finely chopped
  • Good pinch chilli flakes
  • 200g chorizo sausage, diced
  • 1 chicken breast, diced
  • 1 tbsp chopped fresh thyme
  • Salt and pepper
  • 1 tin chopped tomatoes
  • 150ml cream
  • 1 large handful spinach leaves
  • Fresh basil leaves, chopped
  • 100g grated mozzarella


Start this recipe by frying the chorizo sausage in the oil for 2 minutes. Add in the onion, garlic and chilli flakes and continue to cook for 2 minutes. Add in the diced chicken and cook for a minute only. Add in the chopped tomatoes and cream, season with salt and pepper and cook for 5 minutes. When ready, stir in the spinach and mix to wilt. Remove off the heat and stir in the chopped basil and ½ cooked pasta. Transfer to a greased baking tin, sprinkle over the grated mozzarella and bake in the oven for 15-20 minutes or until the cheese is bubbling.
