Wraps with spicy lamb meatballs and cucumber raita

Ingredients

  • 3 tortilla wraps
  • 500g lamb mince
  • 1 fresh chilli pepper
  • 1 small bunch fresh coriander
  • 1 spoon cumin powder
  • 1 spoon paprika
  • 2 cloves garlic
  • Zest and juice of a lime
  • Handful chopped toasted cashew nuts
  • Salt and pepper
  • 4 spoons hummus (Camel Brand)
  • 4 spoons tomato passata (Cirio)
  • 1 tsp harissa paste
  • 200g grated spicy cheese
  • 1 tomato
  • 1 finely sliced onion
  • Mixed lettuce leaves
  • 1 cucumber – grated
  • Juice of a lime
  • 2 tbsp yogurt
  • Fresh mint leaves
  • Fresh seasoning

Method

Whizz together the fresh chilli, coriander, paprika, cumin, garlic, zest and lime juice into a paste. Season the lamb mince with salt and pepper, mix in the cashews and the obtained paste. Mould into meat balls and grill. Dilute the harissa paste with the tomato pulp. Divide the hummus between the wraps, sprinkle with chopped tomato, onion, and salad leaves. Place the meat balls on top and drizzle with the spicy sauce and cheese, wrap tightly, grill before serving. For the raita, mix together the cucumber, yogurt, lime juice and mint leaves
