Method

Blend the fish in a food processor together with the salt, pepper, cream and egg to smooth consistency .Roll the mixture in cling film and seal well. Poach in a pan of boiling water for 10 minutes. For dressing , dice the avocado and mix in the lemon juice ,sherry vinegar and oil. When the fish in completely cooked, remove the cling film and serve together with the prepared dressing.
