Start this recipe by preparing the skewers. Alternatively thread pieces of halloumi cheese, onion, zucchini and pepper onto long wooden skewers. Brush all over with olive oil using a brush, then season with dried oregano, pepper and salt. Het up a griddle pan and brown the skewers on each side for 2 minutes. Meanwhile prepare the minted yogurt by mixing all the ingredients together. To serve, place a few tablespoonfuls of cooked couscous on 2 serving plates. Lay 2 halloumi cheese and vegetable skewers on each plate and serve the minted yogurt in a small bowl on the side.
