Mix the gelatine with the 30ml of water in a small glass and let it swell. In a pot mix the 250ml cream and 250ml milk together and then add together 70g of sugar and a tablespoon of vanilla essence. Heat to near boiling point then take off the heat and let it rest for 10 minutes. Add the gelatine and mix vigorously. Pour into your glasses or moulds and allow to set overnight in a fridge.
