Tuna salad Nicoise with aspragus

Ingredients

For the salad

  • 2 x 120g tins tuna, drained
  • Handful French beans, blanched
  • 10 black olives
  • 8 new potatoes, cooked
  • 8 Asparagus stems, blanched
  • 2 eggs, hard boiled
  • 6 cherry tomatoes, halved
  • Anchovies, optional

For the dressing

  • 1 tsp Dijon mustard
  • Juice of a lemon
  • 3 tbsp olive oil
  • 2 cloves garlic, chopped
  • Fresh seasoning

Method

Make up the dressing by mixinfg all the ingredients together. Put the salad together and drizzle over the mustard dressing.
