Start this recipe by toasting the tortillas in the oven for just 2 minute to crispen slightly. This will stop them from becoming soggy. Remove from the oven. Next, slice or dice the cooked chicken breast and mix in a bowl with the tomato salsa. Spoon this mixture over the tortillas in an even layer. Spoon over the sweet corn and cheery tomato halves. Place into the oven and heat through for about 2-3 minutes. Meanwhile, mix together the yogurt, garlic and mint and season well with salt and pepper. When ready, remove from the oven, toss over the chopped avocado and spoon over the fresh minted yogurt. Serve immediately.
