Method

Cut the peppers and red onions in strips and fry in some olive oil with the ginger, remove from heat and add the cherry tomatoes cut in half plus the mint leaves. Pan Fry the salmon from both sides and finish off in the oven at 180`c. Blend the avocado and herbs with the olive oil and chill for few minutes. Cut the bread the shape of the salmon and place at the bottom, mix the salad leaves with the vegetables and place on it with the salmon on top.
