Take a very sharp knife and make an incision on the surface of the top of panettone, taking care to leave an edge all around. Carefully lift the top and hollow as much of the panettone as possible being careful not to get to the outer crust. In a separate bowl mix the ricotta, mascarpone, brandy and icing sugar, add the strawberries, orange zest, chocolate chips and the crumbed panettone. Fill the cake with the obtained mixture , Press tightly with the lid and chill for a couple of hours Dust with icing sugar before serving.
