Clean and thoroughly rinse the calamari. Chop all the ingredients and combine them together (except for the fish stock and tomato sauce) in a bowl. Stuff each calamari and seal them with toothpicks at the ends. Cook for 5 minutes in a pan, add the tomato sauce and fish stock and leave to cook on a low heat for a further 10 minutes. Serve when ready.
