Halve an avocado lengthwise and remove the pit. (You can get the pit out easily if you tap it with the blade end of a knife and turn. The twisting action will loosen the pit and make it easy to lift out of the depression. Try with a big spoon remove avocado from it’s skin and keep skin to place mixture back in. Dice the avocado into medium sizes. Cut roughly the peppers, onions and mushrooms. In a pan put some olive oil and cook the onions and peppers for 5 min, add the mushrooms. Add the ketchup and mustard flame with brandy. Add the basil, finish with the avocado and a touch of cream. Place mixture into the avocado shell top with cheese and grill until golden brown.
