Strawberry yogurt tiramisu with almond praline

Ingredients

For the tiramisu

  • 500g organic strawberry yogurt (Yeo Valley)
  • 2 tbsp chia seeds
  • 12 savoiardi finger biscuits
  • 300ml soaking syrup
  • Fresh strawberries and blueberries

For the almond praline

  • 100g sliced almonds
  • 100g sugar
  • 2-3 tbsp water

Method

Start this recipe with the praline. Place the sugar and water into a non stick frying pan, mix together and heat gently to a light golden caramel. Stir in the sliced almonds, mix together and immediately pour the hot mixture over a greased non stick baking mat or paper. Allow to cool completely.  Next, place the organic strawberry yogurt into a large bowl and mix in the chia seeds. Chop up half of the the almond praline. Add to the yogurt and mix together well. To put the dessert together, break the savoiardi biscuits into 3, and soak them in the syrup. Place into the bottom of 4 Martini glasses. Spoon over some chopped strawberries and some blueberries. Spoon over the strawberry yogurt mixture. Place into the fridge for 1 hour. Decorate the top with remaining berries and chards of the almond praline before serving.
