Method

Lay the grouper fillet on a large piece of foil. Drizzle over a little olive oil. Dice the tomatoes, olives and capers together and sprinkle over the fish. Pour over the stock and white wine. Fold over the foil to create a parcel and bake in oven for 30 minutes at 160`c. To serve, place the foil parcel on a plate and carefully open up the foil exposing the fish.
