Mix the spices with the mince and sauté on high heat, add the grated ginger chilly, garlic and leeks all roughly chopped and keep tossing continuously. Once browned add the beans, tomato pulp, sweet corn, coriander and toss on medium heat until thickened and remove from heat. Fill each tortilla adding a few cheese to it and tighten well, place on and oven tray and bake until tortilla is slightly browned. Zest and Squeeze the lime in a bowl, mash in the feta and whisk together with the cold cream to form a dip on the side.
