Chop the leek, celery, garlic and sauté in butter until lightly browned than the vegetables remove the pan. Add another knob of butter and sauté the mince chilly and spices until browned. Add again the vegetables, kidney beans and toss, finish with coriander and remove from heat. spread the mixture on 2 tortillas and sprinkle on the mozzarella, cover both with another tortilla and shallow fry from both sides. Meanwhile squeeze the lemons and mix well with the cream fresh and chives, leave in the fridge to rest and serve on the side.
