Seafood involtini

Ingredients

  • 100g mixed seafood
  • 2 pancakes
  • 1 onion
  • 1 whole clove garlic
  • 2 celery stalks
  • 50g butter
  • 50g flour
  • 50ml fish stock
  • 1 boiled crushed potato

Method

Melt the butter in a pre heated pan and cook the finely chopped onion garlic and celery for 5 minutes, then add the flour stir continuously for 2 minutes. Add the seafood and fish stock, reduce till mixture thick, add the crushed cooked potato at end. Use to fill the pancakes and bake for 2 minutes in the oven at 200`c.
