Combine stuffing mix, salt, herbs and pepper. Set aside. Mix butter and garlic, brush outside surface of fish. Place fish in pan on rack. Fill inside of fish with stuffing mixture. Brush top surface with butter. Bake in oven at 180`c for 20 minutes until fish flakes easily when tested with a fork. Drizzle extra butter over fish before serving.
