Salmon fillets with bacon king prawns


  • 200g salmon
  • 2 king prawns
  • 50g cherry tomatoes
  • 2 spring onions
  • 2 rashers bacon
  • 1 tbsp olive oil
  • Mint
  • 1 small glass brandy
  • 1 clove garlic
  • Salt
  • Pepper
  • 1 tbsp butter


Preheat a pan and cook the salmon for 4 minites on each side. Continue to cook in the oven. Meanwhile, roll the king prawns in the bacon and fry in butter till they golden brown Remove from the pan, add in the cherry tomatoes and spring onions and flame with the brandy. Build up the sauce, adding in the mint just before you are ready serve. Place the salomn on a plate, garnish with the brandy sauce and serve topped with the prawns.
